Program Overview:
India is not only the 7th largest country in the world but a 5000 year old civilization. Being in the tropical region, a large part of the country is blessed with different food ingredients. Further over thousands of years, with the rise and fall of several kingdoms and beliefs have only lead to the diverse tastes and preferences leading to a rich variety of aroma, taste and colours. It is well known that Spices were traded from Southern India thousands of years back which is a testimony to the legacy of the rich varieties of food, materials available in the sub continent. The history of India offers a finer perspective into how the food preferences gradually evolved over time. The conquest of the Islamic invaders not only contributed to the new forms of art and architecture but also in the taste preferences of the local populace. Likewise different kingdoms brought with it underlying preferences over food which has enabled this program to be designed.
